Stephane developed a love for cooking as a child between Brittany and Paris, inspired by his uncle’s travels and culinary discoveries. He began his career at just 16, apprenticing at the two-Michelin-starred Sully d’Auteuil before moving to Le Vieux Berlin. His ambition soon led him to London in 1989, where he worked at the Hilton’s Roof Restaurant on Park Lane and helped launch some of the city’s most celebrated restaurants, including Mirabelle and Quaglino’s, alongside leading chefs such as Michael Croft and Martin Webb. After returning to France to join the Michelin-starred Prunier in Paris, Stephane continued his international journey aboard the QE2 and at Patrick Guilbaud in Dublin, another two-Michelin-starred kitchen.
After years spent honing his craft around the globe, Stephane settled in Cornwall, where he joined Rick Stein’s Seafood Restaurant. Within six months he became Head Chef, a role he held for over 20 years, shaping menus and leading the kitchen with creativity and precision. Now serving as Group Chef, he shares his expertise across all Rick Stein restaurants and hosts exclusive dinners. Deeply passionate about local Cornish produce and the region’s exceptional suppliers, Stephane continues to celebrate honest, flavour-driven cooking. When not in the kitchen, he enjoys travelling, watching rugby, and spending time with his wife and three daughters in St Issey.
