Iain and Matthew Pennington are the owners and chefs at award-winning restaurant, The Ethicurean. Their first site is tucked away in a Victorian walled garden, it offers views of the Mendip Hills and artisan food and drink reflecting the brothers’ philosophy of eating seasonally, locally and sustainably. This Spring, Iain and Matthew are opening their second site at Trevibban Mill vineyard and winery. The new restaurant will continue to champion vegetable-led cooking, whilst supporting Cornish fishmongers and pasture rearing farms local to the vineyard. Working so closely with the seasons has led the brothers to experiment with fermentation, foraging and pickling. They will be bringing their knowledge of local produce, preservation techniques and sustainability to the festival this year.
